Pasteis de Nata, also known as Portuguese Custard Tarts, are a delicious and popular pastry that originated in Portugal. Here's a brief history and recipe for you:
History: Pasteis de Nata were first created by Catholic monks in the Jerónimos Monastery in the city of Lisbon in the early 19th century. The monks used egg whites to starch their clothes, which left them with a lot of egg yolks that they needed to use up. They started making custard tarts with the egg yolks and eventually began selling them to support the monastery.
The recipe was eventually sold to a nearby sugar refinery called Fábrica de Pastéis de Belém, which still produces Pasteis de Nata to this day. The recipe is a closely guarded secret, and only a few people know the exact ingredients and preparation methods.
Recipe: While the exact recipe for Pasteis de Nata may be a secret, there are many variations that come close to the original. Here's a recipe that you can try at home:
Ingredients:
- 1 package of puff pastry (thawed)
- 2 cups of milk
- 1/2 cup of sugar
- 1/4 cup of all-purpose flour
- 6 egg yolks
- 1 teaspoon of vanilla extract
- Cinnamon and powdered sugar (for dusting)
Instructions:
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry and cut it into circles that fit into a muffin tin.
- Press the circles of puff pastry into the muffin tin, making sure to cover the bottom and sides.
- In a saucepan, heat the milk and sugar over medium heat until the sugar has dissolved.
- In a separate bowl, whisk together the flour and egg yolks until smooth.
- Slowly pour the milk mixture into the egg yolk mixture, whisking constantly.
- Pour the custard mixture into the puff pastry cups, filling them about 2/3 of the way full.
- Bake the tarts for 20-25 minutes, or until the custard is set and the pastry is golden brown.
- Remove the tarts from the oven and let them cool for a few minutes.
- Dust the tarts with cinnamon and powdered sugar before serving.
