They started making custard tarts with the egg yolks and eventually began selling them to support the monastery.

The recipe was eventually sold to a nearby sugar refinery called Fábrica de Pastéis de Belém, which still produces Pasteis de Nata to this day. The recipe is a closely guarded secret, and only a few people know the exact ingredients and preparation methods.

Recipe: While the exact recipe for Pasteis de Nata may be a secret, there are many variations that come close to the original. Here's a recipe that you can try at home:

Ingredients:

  • 1 package of puff pastry (thawed)
  • 2 cups of milk
  • 1/2 cup of sugar
  • 1/4 cup of all-purpose flour
  • 6 egg yolks
  • 1 teaspoon of vanilla extract
  • Cinnamon and powdered sugar (for dusting)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry and cut it into circles that fit into a muffin tin.
  3. Press the circles of puff pastry into the muffin tin, making sure to cover the bottom and sides.
